BUTTER 4 EGGS 1/2C. PLUS 2T. WATER IN MIXER, WHISK FIRST 3 INGREDIENTS. ADD IN CRISCO, BUTTER. ADD 4 EGGS AND SLOWLY ADD THE WATER. FORM 2 DISKS-ONE LARGER THAN THE OTHER AND REST ON COUNTER COVERED IN PLASTIC WRAP 20 MINUTES.
FILLING: 1 PACK SWEET ITALIAN SAUSAGE, CASING REMOVED AND FRIED UP 2 BROCCOLI HEADS, BLANCHED 2 MINUTES AND CHOPPED 16 OUNCES SHREDDED CHEESE (I USE MOZZARELLA/PROVOLONE COMBO) 5 EGG YOLKS 6 WHITES 10 OUNCES RICOTTA CHEESE SALT AND PEPPER TO TASTE COMBINE THE YOLKS, WHITES, MIX IN SHREDDED CHEESE AND RICOTTA, SALT AND PEPPER TO TASTE. STIR IN THE SAUSAGE AND BROCCOLI TO COMBINE ALL.
PREHEAT 375 OVEN. ROLL OUT LARGER DISK AND FIT INTO 9X13 GREASED DISH LEAVING A 1 INCH OVERHANG. ROLL OUT SECOND DISK AND CUT STRIPS TO CREATE A LATTICE. BRUSH TOP WITH AN ADDITIONAL EGG YOLK AND BAKE 45-55 MINUTES.
