3 BUBBLY BAKERS CONQUER MRS. FIELDS

Here is a great surprise for all of you! Beginning tomorrow, 2 of my favorite, favorite Facebook baking buddies and I are starting a new weekly project called "3 BUBBLY BAKERS CONQUER MRS. FIELDS"... Using Mrs. Fields Best Cookie Book Ever, we will take turns choosing a recipe from this cookbook, baking it, and sharing the picture and recipe with all of you on Mondays! Everyone can always use a little Monday morning pick up! This book has 130 great recipes so each week will be something new and delicious for all tastebuds!! COTTON CANDY CAKE POPS

WE START WITH SOME PINK MERINGUE THAT IS COTTON CANDY FLAVORED....WANNA LICK?
HERE IS MY SOUS CHEF! WE ARE DANGEROUS IN OUR WONKA KITCHEN TOGETHER!
OK, ARE YOU SITTING?? HERE IT IS! A CAKE POP COVERED WITH COTTON CANDY FLAVORED MERINGUE AND THEN IT IS TOASTED LIKE A MARSHMALLOW!!!!!!!!!!!!!!! THE PERFECT CAMPFIRE CAKE POP! WANT ONE????? HAPPY NATIONAL COTTON CANDY DAY! XOXO

DIRECTIONS: START WITH A CAKE POP OF YOUR CHOICE AND INSERT A STICK USING MELTED CHOCOLATE TO HOLD IT IN PLACE. I MADE A VANILLA ONE IN MY BABY CAKES POP MAKER. CHILL THE POPS. NEXT, I MADE THE MERINGUE BELOW. I SPREAD IT ON THE POPS AND USED MY KITCHEN TORCH TO TOAST IT!!!
RECIPE
8 EGG WHITES
2C. SUGAR
1/2 TSP CREAM TARTAR
2 TSP VANILLA (OR U CAN ADD A SMALL AMOUNT OF COTTON CANDY FLAVOR-ADD SLOWLY-IT'S POTENT!)

PLACE EGG WHITES, SUGAR AND TARTAR IN A HEATPROOF BOWL OF AN ELECTRIC MIXER. SET OVER A SAUCEPAN OF SIMMERING WATER AND WHISK CONSTANTLY UNTIL SUGAR DISSOLVES AND WHITES ARE WARM TO THE TOUCH ABOUT 4 MINS.

TRANSFER BOWL TO MIXER AND WHIP GRADUALLY TO HIGH UNTIL STIFF, GLOSSY PEAKS...ABOUT 5-7 , MINS. ADD COTTON CANDY FLAVORING.

CARAMEL CHEESECAKE SQUARES

HAPPY NATIONAL CHEESECAKE DAY! XOXO Caramel Cheesecake Bars
adapted from Chewy Gooey Crispy Crunchy by Alice Medrich

Crust
14 tablespoons unsalted butter, melted and still warm
1/2 cup (3.5 oz) sugar
2 teaspoons vanilla extract
3/8 teaspoon salt
2 cups (9 oz) all-purpose flour

Filling
1/2 cup caramel sauce (use store bought OR what I did was melt some kraft caramels with splash of heavy cream in microwave)
1 1/2 lbs cream cheese, at room temperature
1/4 cup (1.75 oz) sugar
1 1/2 teaspoons vanilla extract
2 large eggs, at room temperature

To make the crust: Preheat oven to 350 F with a rack in the lower third of the oven. Line a 13x9 baking pan with nonstick foil, leaving an overhang so you can lift the bars out after they've baked.

Combine the melted butter, sugar, vanilla and salt in a medium bowl. Stir in the flour until just incorporated - the mixture will be soft, that's fine. Transfer the mixture to the prepared baking pan and press into an even layer on the bottom of the pan. Bake for 20-25 minutes, or until the crust is golden brown. Let cool completely. Turn the oven down to 325 F.

In the bowl of a stand mixer fitted with the paddle attachment, beat the cream cheese on medium speed until smooth, about 30 seconds. Scrape down the sides of the bowl then add the sugar and vanilla, beating until smooth and creamy, about 1-2 minutes. Add the eggs, one at a time, beating just until incorporated and scraping down the sides of the bowl in between. Transfer 2 tablespoons of this batter to the 1/2 cup of caramel sauce and stir to incorporate. Pour the remaining cheesecake batter over the cooled crust and spread evenly.

Dollop the caramel sauce mixture over the filling. Use a toothpick to gently marble the caramel - be careful not to scrape the crust while you are doing it. Bake for 20-25 minutes, or until the edges are puffed and the center is just barely set.

Transfer the pan to a cooling rack and let come to room temperature. Cover and refrigerate for at least 4 hours, but preferably 24. Use the foil sling to lift the bars out of the pan and transfer to a cutting board. Cut into squares with a long sharp knife. The bars can be refrigerated in an airtight container for up to 4 days.

For the wheat free crust:
2 ounces white rice flour (1/3c. plus 1T)
5 ounces oat flour (1 1/4c. plus 2T)
1/4 tsp. salt
1/8tsp. baking soda
2/3c. sugar
2 ounces cream cheese
12T. butter, softened and cut in chunks
1 tsp. vanilla
Preheat 350. Line 9x13 pan with nonstick foil. Beat sugar, cream cheese, butter and vanilla until smooth. Add dry just until incorporated. Press into pan and bake 20-25 minutes until deep golden in the center.

GLUTEN FREE LASAGNA!

HAPPY GLUTEN FREE FRIDAY!!! I ADAPTED MY USUAL LASAGNA RECIPE TO MAKE A GF VERSION AND IT WAS AMAZZZZZING! IF YOU ARE NOT GF, NO WORRIES-JUST USE REGULAR PASTA (EVEN NO BOIL)...THIS RECIPE IS A KEEPER!!!
RECIPE:
FOR THE LASAGNA NOODLES I BOUGHT TINKYADA GF LASAGNA NOODLES AND BOILED 13 MINUTES, THEN DRAINED AND RINSED.
PREHEAT OVEN TO 375!

SAUCE:
2T. EVOO
1 CHOPPED ONION
1 1/2 POUNDS GROUND MEAT (I USED HALF BEEF, HALF PORK)
1/4C. HEAVY CREAM
1 (28 ounce) can TOMATO PUREE
1 (28 ounce) can CRUSHED TOMATOES
SALT AND PEPPER TO TASTE
HEAT OLIVE OIL AND COOK ONION FOR A FEW MINUTES. ADD MEAT AND BREAK IT UP WITH THE BACK OF A SPOON AND COOK FOR A FEW MINUTES. ADD THE HEAVY CREAM AND COOK UNTIL LIQUID EVAPORATES AND ONLY FAT REMAINS. ADD SALT AND PEPPER TO TASTE. ADD BOTH CANS OF TOMATOES. SIMMER ABOUT 5 MINUTES AND THAT'S IT!!!

CHEESE: 1 POUND SHREDDED CHEESE-I USE A COMBO OF PROVOLONE & MOZZARELLA AND PARMESAN FOR THE TOPPING!

(NOTE: I DID NOT MAKE A RICOTTA LAYER FOR THIS LASAGNA AND WE NEVER MISSED IT. FEEL FREE TO MAKE ONE THOUGH AND ADD TO YOUR LAYERS!!!)

ASSEMBLY: IN A 9X13 DEEP DISH, SPREAD A LITTLE SAUCE ON THE BOTTOM AND THEN LAYER NOODLES, SAUCE, CHEESE AND REPEAT. SPRINKLE TOP WITH PARMESAN CHEESE. BAKE COVERED FOR 15 MINUTES. UNCOVER AND BAKE AN ADDITIONAL 25 MINUTES.

DOUBLE CHOCOLATE M & M COOKIES

It's game time! Get your imagination in gear. You're in the kitchen about to decorate double chocolate cookies with m & m's. How do you place the candies on? One of every color? Random placement? Do you include the brown ones????

PARTY WITH PESTO


Have you ever made homemade pesto? Sooooooo yummy!
In a food processor, chop 2 cups basil and 6 garlic cloves. Stream in 3/4c. olive oil. Add 1c. parmesan cheese and 2 ounces pine nuts. ADD 1 TSP SALT AND SOME FRESH PEPPER! Serve over pasta...freezes well, too!

Here is another serving idea! Let the pesto party with some fresh mozzarella, tomatoes, and veggies!

S'MORES POPCORN

SO EASY!!! All I did was pop one bag of microwave popcorn. Combine it on a huge sheet pan with a nice amount of golden grahams cereal, chocolate covered marshmallows and mini marshmallows. Just eyeball this until it all looks equal. Melt about 2c. semisweet chips and drizzle it all over. Pop in the fridge until firm and then break apart! Voila! Easy and yummy!!!

BEAT THE HEAT NO-BAKE GANACHE COVERED OREO SQUARES

RECIPE TIME!! NO BAKE TO BEAT THE HEAT!!
Crust
1 1/2 c. graham cracker CRUMBS
1/4 c. light brown sugar
7 T. melted butter
EXTRA OREOS, BROKEN INTO LARGER PIECES

Combine graham cracker crumbs with sugar. Add butter and when combined, press into the pan you are using. At this point i laid the extra Oreo chunks right on top of the graham crust as a nice surprise layer!!! Now set aside while u make the filling.

PAN CHOICES: I used a williams sonoma pan that had 12 individual square compartments with removable bottoms. You could use a 9 inch springform. (I am thinking this would probably also work in a 9x13 dish lined with nonstick foil or in cupcake liners, right?)

WHIPPED CREAM CHEESECAKE FILLING

2 ¼ c. heavy cream

16 oz. cream cheese, softened

2/3 c. sugar

½ tsp. salt

1 c. Oreos, crushed

Instructions:

Beat heavy cream until medium peaks. Set aside. In a different bowl, beat the cream cheese, sugar, salt until well combined and smooth! Add this mixture to the heavy cream and beat until combined. Carefully stir in the Oreos. Place your filling on top of your crust or crusts (depending on pan choice).

Refrigerate 7 hours or even better ....overnight! (STOP YELLING-SORRY!!!!! It will be worth the wait!!)

Once your bars or cut-or popped out of individual pans it's time to add the ganache!!!! I like to pop them in the freezer while making the ganache. In fact, i think these are delish served frozen!!!!

GANACHE
2/3 c. dark chocolate chips (ghiradhelli yum!)
2 T. heavy cream
4 T confectioner's sugar
2-3 T. warm water
Instructions:

Place chocolate and heavy cream in a bowl and microwave just 30 seconds or so until melty. Stir to combine. Add the sugar and stir. Add the water slooooowly until you reach a pouring consistency and slowly pour over the tops of your cheesecakes!!! I store mine in the freezer!!!

NO-BAKE FROZEN OREO BARS

INGREDIENTS:
24 OREO COOKIES
1/2 STICK BUTTER
1 PINT HEAVY CREAM
1 JAR MARSHMALLOW FLUFF (OR CREME)

MELT THE BUTTER AND CRUSH THE OREOS. COMBINE THE 2 AND PRESS HALF INTO AN 8X8 DISH LINED WITH NONSTICK FOIL SO IT HANGS OVER THE SIDES FOR EASY REMOVAL.

WHIP THE CREAM UNTIL NICE AND THICK, ADD THE FLUFF TO COMBINE. SMOOTH THIS MIXTURE OVER THE OREO CRUST.

ADD THE REST OF THE OREO MIX ON TOP. COVER THE DISH WITH MORE NONSTICK FOIL AND FREEZE OVERNIGHT. CUT INTO SQUARES AND ENJOY!! SERVE FROZEN!

WE OFFERED MAPLE TURKEY, PROSCIUTTO, MUENSTER & AMERICAN CHEESES, OLIVES, RED ONION, HONEY MUSTARD AND THINLY SLICED APPLES!! THEY WERE A HIT! GLUTEN FREE BUCKLE YOUR SEAT BELT BARS

IT'S OUR FIRST GLUTEN FREE FRIDAY!!!!!!!!! HOW ABOUT SOME GLUTEN FREE "BUCKLE YOUR SEAT BELT" BARS??? CARAMEL, PEANUT BUTTER CUPS, PRETZELS, CHOCOLATE CHIP COOKIE CRUST....NOW HOW BAD CAN THAT BE!!!????
RECIPE, ANYONE?


1 BOX BETTY CROCKER GF CHOCOLATE CHIP COOKIE MIX
1c. chopped GLUTEN FREE pretzels (I LIKE SNYDERS OR GLUTINO)
10 caramels
1T. HEAVY CREAM
3c. peanut butter cups, CUT IN HALF OR QUARTERS
1/2c. CHOCOLATE chips of your choice!



Step 1: PREPARE GF COOKIE MIX ACCORDING TO DIRECTIONS ON BOX AND PRESS MOST INTO AN 8X8 PAN LINED WITH NONSTICK FOIL. RESERVE SOME FOR THE TOPPING!

Step 2: Crush 1 cup of GF pretzels roughly with hands and put on top of dough.

Step 3: Roughly chop 3c. peanut butter cups and layer on top of the pretzels.

Step 4: Microwave 10 caramels and CREAM till melted, about 1 minute. Pour on top of peanut butter cups. Mmmmm!

Step 5: Crumble on the rest of the cookie dough that you reserved. Bake about 25 minutes AT 350 till golden and cooked through. Let cool to room temp.

Step 6: Melt 1/2c chocolate chips-milk or semisweet and drizzle across the top when COOLED. Eat up!

STRETCH IT OUT, ROLL IT UP, AND...VOILA!
I LOVE THIS RECIPE:
3 c flour
1/2 Tablespoon baking powder
1 cup sugar
2 sticks butter
1 egg
2 Tablespoons milk
1 tsp vanilla extract

ELECTRIC MIX BUTTER & SUGAR. ADD EGG, MILK, VANILLA. ADD FLOUR & BAKING POWDER. PAT INTO DISK. CHILL 1 HOUR. PREHEAT OVEN TO 350. CRAZY CHOCOLATE CHEESECAKE LAYER CAKE

THIS CAKE BEGAN WITH 2 LAYERS OF CHOCOLATE CHEESECAKE. EACH ONE WAS TOPPED WITH THICK CARAMEL AND GARNISHED WITH CHOPPED OREOS AND PEANUT BUTTER CUPS. ARE YOU SOLD YET?
HERE IS THE OUTSIDE OF THE CAKE. IT IS GARNISHED WITH HANDCRAFTED VALRHONA WHITE CHOCOLATE CURLS


MY FAVORITE PICTURE! 2 CHOCOLATE CHEESECAKES COATED IN CARAMEL, OREOS AND PEANUT BUTTER CUPS MEET 2 WHITE LAYERS COVERED IN GANACHE AND HEATH BARS. THE ENTIRE CAKE IS THEN ENROBED IN GANACHE AND DECORATED WITH CHOCOLATE SPIRALS!

CRUSTLESS CHOCOLATE CHEESECAKE RECIPE:
INGREDIENTS:
3 8-OUNCE PACKAGES OF CREAM CHEESE, SOFTENED
1 1/2TSP. VANILLA
1C. SUGAR
5 EGGS
12 OUNCES MELTED CHOCOLATE (GHIRADHELLI BITTERSWEET)
1 1/2T. FLOUR
ELECTRIC MIX ALL TOGETHER AND DIVIDE BETWEEN 2 9-INCH PANS LINED WITH PARCHMENT AND SPRAYED WITH PAM. BAKE AT 275 DEGREES FOR 75 MINS. COOL IN PAN 15 MINS. THEN COVER AND CHILL IN FRDIGE AT LEAST 3 HOURS!

CARAMEL LAYERS (ENOUGH FOR 2 LAYERS)
MICROWAVE 1 CAN SWEETENED CONDENSED MILK, 5T. BUTTER AND 40 CARAMELS UNTIL SMOOTH!!!

DULCE DE LECHE COCONUT MACAROONS

COCONUT MACAROONS HAVE ALWAYS BEEN A BIG HIT IN MY FAMILY. AFTER MAKING THEM FOR MANY YEARS, IT WAS TIME FOR A NEW TWIST ON THIS OLD FAVORITE! WHY NOT USE DULCE DE LECHE IN THE MACAROON INSTEAD OF SWEETENED CONDENSED MILK! HERE IS A PICTURE OF HOW I MADE MY DULCE DE LECHE. OPEN 1 CAN OF SWEETENED CONDENSED MILK AND POUR IT INTO A SQUARE PYREX. COVER WITH FOIL AND PLACE IN A LARGER PAN FILLED HALFWAY UP THE SIDES WITH HOT WATER. BAKE AT 425 FOR 60-90 MINUTES UNTIL A BEAUTIFUL TAN COLOR. LET COOL. MMMMMMM!!!!


ONCE COOL, I WHIPPED UP MY USUAL MACAROON RECIPE:
IN BOWL, COMBINE 14 OUNCES COCONUT, 1 TSP. VANILLA, THE COOL DULCE DE LECHE AND 2 EGG WHITES YOU WHIPPED TO MEDIUM FIRM PEAKS. SCOOP ONTO PARCHMENT AND BAKE AT 325 FOR 25-30 MINUTES. THEY LOOKED GREAT INCREDIBLE ...BUT I WANTED SOMETHING EVEN MORE OVER THE TOP. ENTER MELTED CARAMEL!!!!


HERE YOU CAN SEE I DIPPED THE BOTTOMS IN SOME HOT CARAMEL. MMMMM!! IF YOU TRY THIS, ADD SOME CREAM TO YOUR CARAMELS AND MELT IN THE MICROWAVE. THEN, LAY THEM ON A GREASED SILPAT. DO NOT PLACE ON WAX PAPER OR YOU WILL HAVE A HUGE MESS. TRUST ME, I KNOW... BECAUSE I DID JUST THAT. LEARN FROM MY MISTAKES!!!! HAHAHA

THE FINAL STEP IS TO DIP THE CARAMEL BOTTOMS (ONCE SET) INTO MELTED MILK CHOCOLATE. UMMMM, HELLO HEAVENLY COOKIE!!!!!!! WANT A BITE?? OPEN WIDE!

WHITE CHOCOLATE BROWNIES WITH OREOS & HANDMADE CHOCOLATE CURLS!

THIS IS WHAT THEY LOOK LIKE IN THE END. SO, LET'S GET STARTED!!!!

CHOCOLATE CURLS BEGIN WITH A SLAB OF CHOCOLATE LIKE THIS!!!!! YUM!
ONCE CURLED, I PLACED THEM ONTO SOME WHITE CHOCOLATE BROWNIES STUFFED WITH OREOS!

HERE SHE IS...ALL DRESSED UP AND READY TO PARTY!!!!!!!!!
RECIPE? HERE YOU GO!!
2 sticks butter
10 oz white chocolate, chopped into pieces
1 1/4 cups sugar
4 eggs
1 T. vanilla
2 cups flour
1/2 tsp kosher salt
OREOS-I DIDN'T COUNT HOW MANY-JUST CUT A WHOLE BUNCH INTO QUARTERS


Preheat oven to 325°F. Line a 9x13inch pan with nonstick foil, leaving some hanging over the edges so u can pull it out later.
In a pot over low heat, melt the butter and chocolate, stirring constantly, until melted and smooth. Remove from the heat. Stir the sugar into the melted chocolate, then stir in the eggs and vanilla. The mixture will look curdled. Add the flour, salt and any chips or nuts of u want to and stir to combine. Fold in oreos. Pour the batter into the pan. Bake the brownies about 30-35 mins. until the top is lightly golden. Don't over bake! Cool to room temp and chill 3 hours. Cut into squares... or triangles!
Optional: Top with melted chocolate if desired and chocolate curls!

MILKY WAY MADNESS BARS

ALL STACKED FOR DELIVERY!A BUTTERY SHORTBREAD CRUST HOLDS THE THICK CARAMEL & SLICED MILKY WAY BARS! OOEY GOOEY GOODNESS!
CRUST:
1 1/2c. FLOUR
1/2C. PLUS 2T. CONFECTIONERS SUGAR
1 1/2 STICKS SOFT BUTTER
ELECTRIC MIX ALL TILL CRUMBLY/COMBINED AND PAT DOWN EVENLY INTO A 9X13 PAN LINED WITH NONSTICK FOIL. BAKE AT 350 FOR 15-20 MINUTES UNTIL LIGHTLY GOLDEN.

CARAMEL:
12 OUNCES CARAMEL BITS (NO UNWRAPPING WITH THESE!) (OR USE 40 WRAPPED CARAMELS)
5 T. BUTTER
1 CAN SWEETENED CONDENSED MILK
MICROWAVE ALL OF THESE TOGETHER UNTIL SMOOTH. GO 30 SECONDS-ONE MINUTE AT A TIME AND STIR IN BETWEEN.

TOPPING:
1 BAG OF MILKY WAY MINIS CUT INTO 4 SLICES EACH. CAN ALSO USE MILKY WAY DARKS OR ANY OTHER CANDY YOU WANT LIKE PB CUPS!

LET CRUST COOL 5-10 MINUTES AND THEN POUR ON THE CARAMEL. PLACE THE CANDIES ON TO DECORATE AND CHILL COMPLETELY BEFORE CUTTING. THESE ARE EASY TO CUT WHEN VERY COLD AND SHOULD REMAIN IN FRIDGE UNTIL READY TO EAT. (CARAMEL WILL GET TOO GOOEY IF LEFT OUT.) HOPE YOU ENJOY THESE RICH OOEY GOOEY DELIGHTS AS MUCH AS WE DID!!!!!!!!
